Rhubarb Peach Crumble {Paleo, AIP}

Boy, it's been a long time since I've posted anything to this blog! First, I was busy moving {into a house - bye bye apartment!}, then I was gone on a month-long vacation to visit my family in America {a trip I only get to do once every two years}, and most recently I bought a puppy {and have been following her around the house making she she doesn't go}. But just because I wasn't posting doesn't mean I wasn't testing out new and delicious recipes!

Whew! It's sure been awhile since I've posted a recipe here! I've been busy spending time with my family since I only get to see them every two years. And part of that time has been spent trying to cook up everything they request in an effort to show them that paleo is delicious and worth sticking to (my parents have been eating more-or-less paleo since January, but complain that it's "boring" - I think I'm proving them wrong!).

This salad came together a bit by accident. I just so happened to spot a huge bag of beet greens for only 1€ at my local street market, so I grabbed it up. Then we just so happened to be busy all day long, so a quick and easy meal was in order. And this was also no cook, making it even better!

Chocolate Ghee Cream {Paleo Chocolate Butter-Cream Frosting}

So, I obviously suck at cake baking. I could refer you to the Great Father's Day Disaster of 2009 involving a horribly under-baked carrot cake, but it would be much more efficient to simply share the photos of the delicious-yet-gooey-in-the-middle vanilla birthday cake of 2015. This failure wasn't nearly as dramatic as the previous one {and no, I haven't attempted to bake a cake since 2009 before today} but I still needed to carefully dissect my creation in order to remove {and nom on} the under-cooked middle.

Banana Waffle {Paleo}


These waffles were born from a desire of two sorts of waffles: sugar free waffles and high protein waffles. I have a few pancake recipes on my blog, and a waffle recipe I still need to post, but they are all relatively low in protein and highish in sugar or starch, either because of an ingredient or because of what you have to put on them to make them tasty.

Nourish: The Paleo Healing Cookbook {Cookbook Review}


As soon as I heard that Rachel was writing a cookbook, Nourish, The Paleo Healing Cookbook, I got excited. I had been following @meatified on Instagram for awhile, and everything she was putting out was inspirational, tasty, or a combination of both! When I learned that it was to be an AIP cookbook, I could barely contain myself - I have to skip over half the recipes in most paleo cookbooks because of pesky nightshades, but not here! When the book was up for pre-order, I placed mine asap. Then, when people started receiving their copies in March, I despaired... Mine wasn't due to ship until May 28th!

Aunt Debbie's Paleo Banana Bread {Paleo}


Wow - It's been far too long since I last posted! Life has been crazy-busy lately since I'm only 8 days away from my school's dance concert. That means I had to invent dances, teach them to my students, practice them - and sew costumes! I'm averaging 10 hours of sewing per week - plus work, plus CrossFit, plus life! Things should be back to normal after the concert though...

One of the things that has made my life easier during this rush was having post-workout snacks ready to grab-and-go. My favorite one? Banana bread.

The Performance Paleo Cookbook {paleo cookbook review}


I was first drawn to this cookbook by its promise of fueling my body correctly fr my sport, but I soon realized it wasn't just a sports cookbook - it was a dang good cookbook! Seriously, every recipe I tried was amazingly delicious - and super simple to throw together. Plus, there are full color photos on nearly every page - and I love me a photo-filled cookbook!

Life had the both of us running around like chickens with their heads cut off, and, sadly, we both paid the price for not taking the time to slow down a bit. But, he decided he wanted to cook today, even if he was sick. I, nice wife that I am, went shopping for the ingredients he asked for, brought them home, and then I left him to it.

Last Wednesday, a colleague asked me if I was feeling alright because I looked like crap (I have rather blunt colleagues). I should have taken her concern to heart and asked myself if I really was alright, but I laughed it off and told her I was just fine.

Once, these uglies were hearts. At least they taste great and work well!

If you follow my blog, you'll remember I got a cough a couple weeks ago and I "cured" the painful, swollen throat part of it using a horrible tasting mixture of turmeric and apple cider vinegar - but the cough remained. It was like I had a constant tickle in the back of my throat that just would not go away. It would send me into coughing fits that happened more and more often. It got to the point where I could not even finish a sentence without first coughing up a lung.

I decided to look into making my own cough drops.

My sister is a pretty smart cookie.

You see, each and every year I fall victim to a horrible sinus infection. I feel the infection creeping up on my for days, then the pain and suffering hits me full force and I am out for at least a week and a half before things start dying down a bit and symptoms gradually fade away. With everything being said and done, I can usually look forward to about 3-4 weeks of snot, pain and body aches each winter.

But not this year.

The Food Pyramid Experiment

For those of you who don't know, I'm a teacher. I teach mainly 5th and 6th grade, but I also spend a bit of each week teaching 1st and 2nd graders. I teach the 1st and 2nd graders English, and I teach the 5th and 6th graders in English. What I mean by that is, I teach geometry, history, science, geography and art/music IN English - that way, the children learn English naturally. {And it works pretty well, too!}

As part of my science curriculum, I talk about nutrition. I have a hard time teaching children that the food pyramid is the correct way to eat, so I always made a point to compare MANY different food pyramids {Mediterranean, vegetarian, traditional...} to show my students that there is no one "right" way to eat.

Like a lot of my recipe "inventions" this one started with a recipe... and ended with me not having any of the ingredients! I then made substitution after substitution... and ended up with something delicious!

This particular recipe started with Mickey Trescotts' Classic Tuna Salad recipe from The Autoimmune Paleo Cookbook... and ended up as Meg White's Classic Salmon Salad.

Boar Stew with mushrooms {Paleo, Whole30}

This year was my second New Year celebration while fully paleo. We had a giant stuffed turkey last year, but wanted to change things up this year with a bit of wild game meat... and the animal we chose was wild boar.

Since I'm the one with the most food restrictions, it fell to me to find a recipe for our boar. I searched around a bit, and found one I liked. I sent the link to everyone I was celebrating New Year's with, and they all gave their approval.

As the date grew nearer, I grew anxious. I mean, the recipe was a stew recipe. Was stew going to be fancy enough for ringing in the new year? I sure hoped so...

I met up with a friend for lunch the other day. We went to college together, and while we don't get together often, we make an effort to not let too much time go by between visits.

Olive Tapenade {AIP, Whole30, Paleo}

Anytime I am asked to make an appetizer, or anytime I am having people over to eat, I make tapenade. It's super simple, tastes delicious and pairs perfectly with veggie chips - making it a great paleo choice!

I don't really have a "recipe" for my tapenade. All I do is take a can of pitted olives {any color is fine}, drain off the liquid, and blend with olive oil until it's a consistency I like.
